Bacon. We love it. We seem to have bacon flavored everything nowadays, and it appears to go on or can be paired with anything. Plus there are bacon bits, bacon vodka, bacon beer, bacon ice cream and the list goes on. There are even I heart bacon t-shirts, bacon Halloween costumes, bacon pet costumes. So much bacon. Also, and this may shock you, actual bacon has completely surpassed Kevin Bacon in popularity. Sorry Kevin.
But it wasn’t always like this. There was a time when bacon almost wasn’t even a thing at all. Back in the 1980’s people became overly health conscience. They wanted to “eat lean”. Fat-Free was the mantra and people were eating it all up. Literally. Diet sodas were the go to order; butter was kicked to the curb for margarine as people tried to fight high cholesterol . Now, there is nothing wrong with staying healthy but come on, no bacon? Absurd. But it’s true, pork and specifically bacon became persona non grata in the 80’s. Bacon sales fell off a cliff.
However, in the height of all this healthiness and with the people at Big Pork freaking out, boneless-skinless chicken breasts became a thing. Some thought they were doomed. Stick a fork in them. But someone at Big Pork came up with a brilliant idea that would turn it all around and more importantly, give bacon a lifeline. That idea was the “Pork: The Other White Meat” marketing campaign. Suddenly pork was back on our good side. For bacon, it would take a little bit more time, but eventually, bacon started gaining popularity as well. Starting slowly at fast food chains as a flavor enhancer, then it gained momentum with the likes of the Whopper with bacon and of course, the Baconator. Once the National Pork Board (yes, that’s a thing) started using the catchphrase “Bacon Makes It Better” it was game over. Bacon took its rightful spot in our hearts and more importantly, in our belly.
I don’t know about you, but I for one am thankful that bacon is apart of my life. I don’t think I will ever come around to bacon flavored ice cream or beer but I am open to most other bacon related things. Please keep them coming world.

– Grilled noble sourdough bread (it’s noble so you know that it is delicious)
– Sweet onion jam (You know, I don’t really do onions, but Migs and Chris vouched that it’s the bomb)
– Red pepper jam (I ate the whole thing.)
– Whole grain mustard (Who doesn’t like mustard and whole grain? Stop.)
– Gherkins (Which is a variety of cucumber, I had to google it, I’m not ashamed.)
