This month’s Featured Menu Item is the Whole Roasted Branzino from Hearth ’61 at Mountain Shadows. Not only does Branzino have a cool sounding name that is fun to say. Try it; I’ll wait. It is also an iconic Mediterranean fish that ranges from one to three pounds. Branzino, or European Sea Bass, has a delicate, white flesh and a mild, almost sweet flavor. Hearth ’61 at Mountain Shadows has their Branzino flown in fresh from Greece. When we filmed our video review, this was a crowd favorite amongst the group. Also, you will be more than satisfied with the portion size. But don’t let that stop you for pairing it with a side. We recommend the thyme roasted fingerling potatoes. Yes, that is a lot of food. But sharing is caring!

Whole Roasted Branzino
As we said, the Branzino is flown in fresh from Greece. To prepare it they butterfly the incredible small sea bass and roast whole in the hearth. They then spread a mixture of olives and Calabrian chilis down the center of the fish and finish with brown butter and pea tendrils.
