April Featured Menu Item – Hay Roasted Lamb Persillade
This month’s Featured Menu Item is the Hay Roasted Lamb Persillade from Sonata’s Restaurant. First, let’s just get this out of the way right off of the bat. Yes, as you can see in the above picture. They light it on fire. I know, I know. Mic drop and that is all that needs to be said for you to go try this unbelievable dish. However, Sonata’s Restaurant’s Hay Roasted Lamb Persillade is so much more than that. The lamb is roasted perfectly and so full of flavor that you will savor every bite. Once the flames subside, of course.

Hay Roasted Lamb Persillade
One of the many great things about Sonata’s Restaurant is that they design all of their offerings to utilize local farmers and businesses. The Hay Roasted Lamb Persillade is a great example of that. Utilizing locally sourced grains, glazed mushrooms, carrots & eggplant topped with a veal glace. That they then light on fire, did we mention that?
My mouth is watering just thinking about this dish! One last thing that I wanted to touch on is the Persillade (pronounced). For those that do not know, Persillade is a sauce or seasoning mixture of parsley chopped together with seasonings including garlic, herbs, oil, and vinegar. This is an excellent, absolutely excellent finishing touch to an already incredible dish. We highly recommend pairing this dish with a nice red wine or if you fancy, one of their exclusive draft beer offerings.
